I’ve found no better way to experience a culture than by its food—how it’s prepared, how it’s eaten, the thought that goes into it, the gathering around the table to enjoy it—from the fondue & raclette of Switzerland to the gas station hot dogs in Iceland to the clotted cream dolloped on jam-covered biscuits (or is it jam dolloped on clotted cream-covered biscuits?). So, of course, when I lived in Central Asia (as I mentioned in Flaws and all), and my language teacher offered to teach me how to make Plov, the most authentically Central Asian dish, I said, “YES, PLEASE”—or rather, “ДА, ПОЖАЛУЙСТА.”
